Rhubarb Apple Crisp & Recipe Link-Up!

How many of you have ever tried rhubarb? It's a fairly new vegetable to me. Nick's mom gave us two rhubarb plants for our garden this year and a co-worker brought a bunch of rhubarb into work to give away. So you know what that means-- time to make something yummy!

This recipe is super easy, takes few ingredients, and is absolutely delicious.

3/4 cup all purpose flour
3/4 cup (packed) brown sugar
1/2 cup oats
1/2 tsp ground cinnamon
6 tbsp. (3/4 stick) unsalted butter, room temperature
1/2 cup chopped almonds of walnuts 

Mix the first four ingredients together in a medium bowl. Add in butter until mixture begins to clump together. Mix in nuts.

1/2 lb (~4 cups) apples, peeled, cored & cut into 1/2-in pieces
3/4 lb (~3 cups) rhubarb, cut into 1/2-in pieces
3 tbsp sugar
2 tsp all purpose flour
1 tsp vanilla extract


Preheat oven to 400 deg F. Combine all ingredients in a large bowl and stir to coat apples and rhubarb in the sugar, flour and vanilla. Transfer mixture into a glass baking dish (8x8x2).

Sprinkle topping evenly over filling. Bake ~45 minutes or until fruit is tender when pierced with a knife. Topping should be crispy, but if it begins to brown too much, you can cover with aluminum foil.

This treat was an absolute hit in the office.
