How Do You Freekeh? {giveaway}

How do you Freekeh?
"How do I what??"

Freekeh is an ancient roasted grain that was accidentally discovered when a Middle Eastern village was attacked and their crop of young green wheat was set ablaze. In an attempt to salvage what they could of the crop, the villagers rubbed away the burnt chaff, cooked it up, and Freekeh was born. 

Freekeh is a new-to-me grain. I was excited to get the opportunity to try it out. We eat a lot of rice in our house, and Freekeh seemed like a great alternative. 

Nutrition Facts

USDA Organic and Verified Non-GMO, two of my favorite labels to see on food, made me even more interested in this product. Each package of Freekeh contains four servings, is naturally low in fat and sodium, and high in resistant starch. Freekeh comes in Original, Rosemary Sage, and Tamari.

Each serving contains:

130 calories

6 g protein

4 g fiber
26 carbs
1 g fat

Cooking with Freekeh


Ok-- so that all sounds good, but how do you actually cook with Freekeh?

Freekeh can be used in many ways. I'm relatively boring with my cooking, so I used it as the base of a stir fry. The Freekeh Foods website gives a few ideas on how to use Freekeh.

Freekeh Shrimp Stir Fry

Who doesn't love a good stir fry? Instead of the typical rice base, I used Original Freekeh, and was very pleased with the outcome.

Ingredients

carrots
broccoli 
cauliflower
onion
eggs
shrimp
1 tbsp butter or oil
Freekeh
stir fry sauce of your choosing

Directions

In a medium size pot, combine 2 1/2 cups water with entire package of Freekeh. Bring to a boil, cover, and reduce to a simmer.

Chop all vegetables. In a large skillet saute vegetables. In a separate bowl scramble a few eggs. Once the vegetables are about half way cooked, add the scrambled eggs to the skillet. Stirring continuously, scramble the eggs until fully cooked. Add the shrimp to the skillet and cook until shrimp is done. Stirring regularly. Add stir fry sauce of your choosing to the skillet to fully cover mixture.

The Freekeh should be fully cooked by the time the stir fry is ready.
