Garbage Soup

Got your attention, didn't I? 

Garbage soup-- weird name, but a fun and flavorful way to use up those vegetables that might be getting a little old to do much with. You know the ones I mean. Slightly wilted. Or maybe just a touch of brown. Usually you feel bad tossing them out or you try to come up with an innovative way to use them.

My recipe for garbage soup will probably be different from your recipe, and it will probably even be different from the next time I make it!

Most of the ingredients will be items you already have on hand. They only thing you would need to add to your grocery list are broth {unless you happen to have recently cooked a whole chicken or ham bone} and any other-than-what's-in-your-refrigerator vegetables you may want to include.


So here's my recent version of garbage soup!

Ingredients

. 2 cups water
. 48 ounces of chicken broth
. 1/3 bag of sad-looking whole carrots, peeled and chopped
. 2/3 bag of celery
. 1 head of cauliflower 
. 1 1/2 bags of frozen corn {we had multiple partial bags of opened frozen corn-- that really needed to be used!}
. Mix-and-match half eaten boxes of noodles 
. Parsley flakes, basil, black pepper, crushed red pepper, to taste

Instructions

Combine water and broth in large pot. Bring to a boil. Peel and chop vegetables. Once the water is boiling, add all vegetables and noodles to the pot. Sprinkle spices to your liking. Boil for approximately 20 minutes.

Let soup cool a bit then serve with bread or crackers.

Wasn't that, pretty much, the easiest recipe ever?? It's super healthy too! I love when we can use up food so as not to waste, and get a simple, delicious and healthy meal in the process.
